Le Maitre D' & Sommelier has always taken a unique and maverick approach in the Gourmet Food marketplace. Working with artisinal and organic producers and the advent of technology we are able to provide naturally healthy food for our clientele at a reasonable price.

In addition many of our products not only promote a healthy lifestyle but are also environmentally sound.

We believe, what is good for our planet is good for you and the ones you love. Listed below are some of the organizations that we work with and their respective certifications which bare the seal on many of our products. Thank You for taking an interest in the slow food movement.

Organic certification is a certification process for producers of organic food.

Requirements involve a set of production standards for growing, storage, processing, packaging and shipping that include: avoidance of synthetic chemical inputs not on the National List of Allowed and Prohibited Substances (e.g. fertilizer, pesticides, antibiotics, food additives, etc.), genetically modified organisms, irradiation, and the use of biosolids; use of farmland that has been free from prohibited synthetic chemicals for a number of years (often, three or more); keeping detailed written production and sales records (audit trail); maintaining strict physical separation of organic products from non-certified products; undergoing periodic on-site inspections.

The Certified Humane Raised and Handled® label assures consumers that the producer meets our standards and applies them to animals from birth through slaughter.

Animals have ample space, shelter and gentle handling to limit stress. Ample fresh water and a healthy diet of quality feed, without added antibiotics or hormones. All cages, crates and tie stalls are among the forbidden practices, and animals must be free to do what comes naturally. For example, chickens are able to flap their wings and dust bathe, and pigs have the space to move around and root. Producers must comply with all food safety and environmental regulations.

Prairie Wise certification ensures the sustainability of our food system taking into account a broader range of social and environmental concerns that start at ranch level.

Prairie Wise ensures a holistic approach to ranching systems. To be officially Prairie Wise Certified ranchers must: Practice good grazing management and land stewardship, use low-stress animal handling techniques and ensure the humane treatment of animals No use hormone or antibiotic supplements whatsoever. Eliminate pesticide use and toxicity. Protect water resources and enhance soil resource thus providing and enhancing wildlife habitat.

A Gluten-Free logo denotes a food product that excludes gluten.

Gluten is a protein found in wheat (including kamut and spelt), barley, rye, malts and triticale. It is used as a food additive in the form of a flavoring, stabilizing or thickening agent, often as "dextrin". A gluten-free diet is the only medically accepted treatment for celiac disease, and health conscious individuals.

The Marine Stewardship Council's fishery certification program and seafood ecolabel recognise and reward sustainable fishing.

They are a global organisation working with fisheries, seafood companies, scientists, conservation groups and the public to promote the best environmental choice in seafood.

WWF works with businesses on different issues and on different scales.

Business Mobilization focuses on the goal of achieving transformational conservation resulting from our key priorities: ocean conservation, freshwater health, Arctic stewardship, climate change mitigation and renewable energy solutions. This can range from collaboration on developing conservational goals to changes in the supply chain resulting in better environmental policies.

Freedom Food is the RSPCA’s farm assurance and food labelling scheme.

It is the only UK farm assurance scheme to focus solely on improving the welfare of farm animals reared for food. Whether it is an egg-laying hen, a salmon, or a sheep (or for that matter, any other animal covered by the scheme), we believe that animals reared for food deserve a happy, healthy life. This means providing them with an environment that meets their needs – needs not confined to space, food and water but psychological needs too. So providing a stimulating environment that enables the animals to exhibit their natural behaviour is very important.

Alaska Seafood. Wild-caught Alaska salmon, whitefish varieties and shellfish mature at a natural pace, and swim freely in the pristine waters off Alaska's rugged 34,000-mile coastline.

The flavor and color characteristics come from the seafood species feeding on their natural diet of marine organisms, and the texture comes from annual migrations in the cold North Pacific. Nutritious, low in saturated fat, and high in the "good fats", heart-healthy omega-3s, start with Alaska Seafood. Environmentally Responsible Careful management based on conservation assure abundant stocks of salmon, halibut, sole, and shellfish, so Alaska seafood is an environmentally responsible choice.
