The Delmonico is a cut selected from Prime Steer only which represents the top 4 % of Cattle . This steak was made ultimately made famous from the butchers of Delmonico's restaurant in Manhattan in 1837.

The Delmonico is specifically selected from the second to the fifth rib from Prime Steer only and comes in at a whopping 22 oz per steak. This results in what steak aficionados call the butter cut, as it is the most tender Rib Steak known to man.
Our Delmonicos are aged for a total of 50 days using the french technique of combining both wet and dry aging to capture the provenance of the beef.
