Manchego, made from sheeps milk, is Spain’s most popular cheese, and is strictly name-controlled. It is produced in Central Spain's La Mancha region, a territory known for its fierce winds, violent temperature swings and desert-like aridity.
This extra-aged Manchego is aged for over 12 months, giving it a sharp, nutty flavor and a firm, slightly brittle texture.
