Chef Jurg Munch of Lahaina Grill in Hawaii, formerly of the Mandarin Oriental Hotel in Hong Kong, raves about this delicacy he serves as tartare. It’s the prime cut of the salmon, like the fillet steak, infused with black truffles. In our own restaurant, we simply slice it sashimi style, as shown, and accompany with a few leaves.
